Ok so it started with this video:
Needed ingredients:
2 lbs (.90 kg)of 2 row malted barley
1.5 gallons (5.6 l) of water
2 ounces (56g) fresh ginger
5 cardamom pods
1 tsp fennel seeds
3 whole cloves
2 cinnamon sticks
2 whole star anise
1 tbs allspice berries
MASH
Mix the barley with water ( use 1 gallon to start) – then bring to between 145 – 160 degrees ( aim for 158), take off the heat, add lid and let it sit for one hour. Do not stir.
Strain out the solids.
Run remaining water over the barley to rinse off any extra sugars.
Put liquids in a pot on the stove. Gather spices into cheesecloth and gently crush them. Put the cheesecloth bag into the liquid and boil for one hour.
Cool liquids ( set pot into a tub of cold water)
Squeeze out the spice bag
Strain into jug.
Add yeast.
Add airlock on top and set out of daylight.
